You can freeze both home and purchased pizza. The main thing that the product was fresh.

I'll show you how I freeze a homemade pizzacooking on this recipe. You can freeze not only the already prepared pizza, but also the raw stock, and I'll try to describe in more detail all the subtleties of this process.

A. Freezing raw pizza.

Since the yeast dough easily tolerates frost, pizza can be harvested for future use in raw form.

Take the yeast dough and roll out of it a circle of arbitrary diameter. I prefer to freeze mini pizzas, whose diameter varies around 15-20 cm.

Fold the parchment paper in half, so that it is slightly larger than the diameter of the dough circle.

Carefully transfer the test circle to the parchment. Puncture the dough with a fork in several places. Cover the base of the dough with tomato sauce (or ketchup), lay out the filling and grind everything with cheese.

Now, try to move the pizza neatlyparchment in the freezer. If the pizza is too big, then place it on a board or flat dish and place it in the freezer. I placed the mini pizzas on a flat pallet in my freezer. Now you need to give the pizza time that it is sufficiently frozen, otherwise it will be inconvenient to pack for further storage. To accelerate the process of freezing, you can turn on the "superfreeze" mode. The temperature should be within minus eighteen-minus twenty-two degrees.

After about an hour or a half, the pizza will freeze enough. It can be easily removed from the paper and held in your hand.

Wrap the raw frozen pizza in several layers of food film, so that the odor is not absorbed in the dough and stuffing, and the frosty air does not get inside the pizza and does not dry it.

Be sure to attach a label with the datefreezing and product name. If you freeze several different pizzas, for example pizza with chicken and peaches, pizza with tomatoes and cheese or pizza with porcini mushrooms, then the name or composition of pizza is better indicated on the label.

Fold the raw pizza in food film in the freezer and store at a temperature of no higher than minus eighteen degrees, the period is not more than 6 months. Do not re-freeze!

In order to unfreeze and prepare such apizza, you need to get it out of the freezer and move it to the refrigerator, thus allowing the product to thaw gradually. In the process of defrosting, when the dough becomes not so hard, but still slightly frozen, you can remove the film and transfer the pizza to a sheet of parchment paper. On the same sheet pizza can be transferred to a baking tray, placing it on the middle section, and cook in a preheated oven to 200-210 degrees.

The time for cooking can go from 12 to 15minutes, because it all depends on the diameter of the pizza and the thickness of the dough. When the edges of the pizza blush, and the cheese on the surface melts, and you smell the cooked dough - the pizza is ready.

C. Freezing the finished whole pizza.

Before freezing, the pizza should be completely cooled.

Next, you need to wrap it well in a food film and stick a label with the date and information about the product.

If your pizza is cooked on a fairly thintest and it is problematic to wrap the film, then transfer it to a cardboard or thick paper, folded in several layers, and only then tighten everything in a film.

Keep pizza in the freezer for no more than 6 months, the temperature should be minus eighteen degrees. Do not re-freeze!

Prepare to eat pizza can be in the oven and in the microwave. First, take it out of the freezer and let it thaw a little. You can not completely unfreeze it.

If using an oven, then heat it to 150 degrees, place the pizza on parchment paper and soak in a hot oven in the middle section for about ten to fifteen minutes.
