  • - 1 glass of cream;

  • - 1 kg of frozen white mushrooms;
  • - 2 heads of onions;
  • - 50 g of butter;
  • - 1 cup of breadcrumbs;
  • - 2 eggs;
  • - 1 glass of sour cream;
  • - ground black pepper;
  • - salt.
  • For white mushrooms in hunting:
  • - 800 g of frozen white mushrooms;
  • - 3 tomatoes;
  • - 6 Bulgarian peppers;
  • - 1 onion;
  • - 1 tbsp. l. flour;
  • - 50 g of butter or margarine;
  • - green parsley;
  • - cumin;
  • - salt.

1. Mushroom cream soup of frozen white mushroomsonions from the husk, finely chop and fry in butter until soft. White mushrooms thaw in the microwave and cut into cubes. Add to the onions and fry for 5-10 minutes with constant stirring. After that, without removing from the fire and without stopping to stir, add flour, washed peeled celery and parsley roots, pour the chicken broth and boil the soup with a weak boil for 40-50 minutes. Then pour the broth and leave, remove the roots of parsley and celery, and mushrooms pass through a meat grinder or wipe through a sieve and mix with the left broth. With a whisk or fork, whip the raw yolks and combine them with the cream. After that, in a thin trickle, stirring constantly, enter the mixture into the soup. Salt to taste and heat in a water bath to a temperature of no higher than 70оС.

Thawed mushrooms are not subject to long storage, they are recommended to be cooked immediately.

To prepare this dish, you can useand fresh mushrooms. If there is no sour cream, replace it with a low-fat cream. Champignons bought in their personal packaging should not be washed before cooking, because they are already clean.

When cooking frozen mushrooms ischoose those that were subjected to the so-called shock freeze. Thus, mushrooms save all their useful properties and vitamins. You can give mushrooms with mashed potatoes or as a garnish.
