Broth can only be frozen freshly brewed,immediately after its cooling. In the freezer it can be stored for up to 10 days, but before using it is better to bring back the boil. A very "lacacious" nutrient medium for microbes is the broth. The vitamin value of even the freshest broth is negligible, so it can be neglected. Boiled meat and mashed potatoes can also be frozen from it, but only in extreme cases: there is practically no vitamins left in the meat after freezing-defrosting.
